Not exactly fit: Computing in Science & Engineering
I was wondering exactly the same these days: if one develops a technique or a tool for the Mac that might have useful scientific applications, is there any journal where it can be published, apart from the web (well, this site of course...) or generic mags such as, say, MacWorld (which on the other hand would never publish something like that)?
The only one that comes to my mind is Computing in Science & Engineering (http://www.computer.org/portal/site/cise/index.jsp), the descendant of AIP's Computers in Physics (which taught me so much in the 90's).
However the journal is focused on general algorithms and computational problems, rather than on applications of scientific computing on Mac OS X (or any OS for what matters), as of your request.
Scientific Computing Publications
It would be worth having a look at BioMedCentral Chemistry Central etc (http://www.biomedcentral.com/home/) whilst not Mac OS X specific they do publish Algorithms, scientific software, databases, data mining etc.
Just browse by Journal title and look at some of the papers.
