OS X benefits on Biomedical Engineering.

Hello everyone, I am in charge of the new program for the Laboratory of Anatomy & Fisiology I in the Biomedical Engineering Department of my University, so I am thinking on making of this lab something not as silly & un-practical as it is right now.
I am thinking of creating new projects using MATLAB, LabVIEW & Biopac but I also would like to use some software specifically related to BME if possible that will run on OS X.
If you are at the BME department of your university what are undergrads doing in a lab similar to this one?
Also any other cool ideas for the program of the lab are greatly appreciated.
